我的 Carl Griffith's 1847 Oregon Trail Sourdough Starter 傳奇 Thanks to the late Carl Griffith 很多到我家的朋友都會對廚房案頭的一瓶酸酸餿餿的東西很感奇怪;當我告知這是有多於150年的 natural yeast,實際歲數遠超於此,我是用來做日常吃的麵包時,他們都會嚇一跳;都會追問這瓶奇怪東西的故事。 這就是一位在美國,我不認識的老人家 Carl Griffith 送給我的一份珍貴禮物;他這慷慨的舉手之勞也扣動了我的心,改變了我日後對人對事的一些看法。 我與 Carl 的結緣應在 1995 年或更早一點,那時他已是75歲。 我的兒子小時候有氣管敏感 (假哮喘),轉天氣發作起來嚇壞人的,面紫唇青的,氣也喘不過來,什麼醫生都看了,都沒什麼大進展。 那時工作需要,時常要做大量的資料搜集,偶爾發現大自然的 Living culture 會有幫助,但這奇怪的東西是聞所未聞,更不知從何著手。 當時互聯網沒有今天的發達,一般 Newsgroup 的討論交流都是通過用大學的 BBS 平台,那時仍然是行DOS 模式的,不知你能否想像得到,情況也就像今天的Facebook。 我在 BBS 拋出了一條問題;繼而引發起一連串的討論,這位 75 歲的老人家便是其中一位討論者,他給了我很多 關於 living culture 的知識。 他知道我一直有自己做麵包,沒多久,我便收到他寄來的一包 Dried Starter,還付上關於這 living culture 的歷史,用法,食譜,保養等等資料...... 他還告訴我,我倒是他的第一位亞洲 "客人" 呢!! 湊巧的,兒子的氣管敏感也在那個時候好了起來,是不是這 yeast 的關係便不得而知。而這 Starter 便在我家住下來,傳宗接代,自我進化的。 據聞這 yeast 是印第安人傳下來的寶,那族的長老每日都要抱著它睡覺;想是因為天氣寒冷,要用體溫保暖讓它繼續繁殖,以供族人日常做麵包之用。 我亦一直到今天都用它來做日常的麵包,也送了給不少朋友。若不理它一陣子,它可是會不高興發脾氣的,就像一個淘氣的 BB,要呵護著的呢!! 若你也想擁有這 Starter ,請聯絡我,我很樂意送你一份的。 RL 2009/11/23 這是 Carl 寄來關於這 starter 的:
" Oregon Trail Sourdough Starter History
The history has been asked for. All I know is that it
started west in 1847 from Missouri. I would guess with the family of Dr.
John Savage as one of his daughters (my great grandmother) was the cook. It
came on west and settled near Salem Or. Doc. Savage’s daughter met and
married my great grand father on the trail and they had 10 children. It was
passed on to me though my parents when they passed away. I am 76 years old
so that was some time ago. I first learned to use the starter in a basque
sheep camp when I was 10 years old as we were setting up a homestead on the
Steens Mountains in southeastern Oregon. A campfire has no oven, so the
bread was baked in a Dutch Oven in a hole in the ground in which we had
built a fire, placed the oven, scraped in the coals from around the rim, and
covered with dirt for several hours. I used it later making bread in a chuck
wagon on several cattle drives - again in southeastern Oregon. In the memory of Carl Griffith: Carl T. Griffith, who gave a sourdough starter to anyone who asked, or who sent him a self-addressed stamped envelope, died early in the year 2000 at the age of 80. He is known for his generosity and the high quality and vitality of his sourdough starts, which came from a sourdough culture carefully nurtured and preserved in his family for over 150 years.
Photo by LeJeune,1999 Carl was born in the desert country of eastern Oregon in Burns on September 4, 1919, the only child of Dr. Carl C. and Bertha W. Griffith. He graduated from the University of Oregon School of Business Administration in 1947 and the School of Law in 1950. He practiced law in Oregon, Utah, and California. He served in the Air Corps in England during World War Two and remained in the Air Force Reserve until he retired in 1979 as a Lt. Colonel. He died March 23, 2000, in Sequim, Washington, where he had lived since 1990. http://home.att.net/~carlsfriends/
