私房叉燒醬 Char Siu Sauce

用前請先搖勻醬料 Shake bottle well before use

  1. 一斤半梅頭豬肉請肉檔代切長件約1吋厚,洗淨,

  2. 用4湯匙糖醃1/2小時,倒去水份,

  3. 加入8湯匙叉燒醬醃4-5小時;

  4. 便可放入焗爐中火200∘C焗約25-30分鐘;

  5. 掃上剩餘醬汁,多焗一會使成。

  6. 也可用中式鑊上鋪放一塊錫紙,上放叉燒,蓋上鑊蓋;

  7. 中慢火焗約20分鐘便成 

 

叉燒醬也可用以醃製燒排骨、豬頸肉、燒雞、雞翼、雞脾等;製法如上。
除排骨可以醃過夜,其他肉類不宜醃過久,否則肉類會變軔影响食味。

  1. Use 1 1/2 catties of pork, cut into 1” thick pieces, wash and drain;

  2. Add 4 tablespoons of sugar, marinate for 1/2 hour, drain away
    the liquid;

  3. Add 8 tablespoons of Char Siu Sauce, marinate for 4-5 hours

  4. Bake in oven 200∘C for 25-30min;

  5. Brush on remaining sauce, bake until brown.

  6. OR line a Chinese wok with a piece of aluminum sheet, put in pork, cover and cook with medium fire for about 20 minutes.


    極品手打上海掛麵  Handmade Shanghai Noodles

煲滾水放入手打掛麵,水滾後加入1/2杯凍水再煑滚,
水再滾後加入1/2杯凍水,再滾起,便可取出放入上湯內,
加入配料、麻油盬調味即可食用。

 

Boil water in a pot, put in noodles, when water boils again,
add 1/2 cup of cold water, when water boils a third time,

add another 1/2 cup of cold water, bring to boil, take out noodles and drain away the water.
Place noodles in chicken soup,

add vegetables, meat, sesame oil and salt.


    蝦子麵、菠菜麵、全蛋麵 Shrimp Roe/Spinach/Egg Noodles

     

    湯麵煮法:  在煲內放入麵,加入一碗凍水,,中大火煑至沸及麵條散開
    (約3分鐘),連同煑麵上湯,加入蔬莱肉類等配料,

    加入麻油盬調味即可食用。 

    也可用作撈麵,炒麵。

     

    微波爐煑法 : 先將麵放微波爐碗用凍水浸約3分鐘,放入微波爐
    高火煑2分鐘,取出用筷子將麵條鬆開,放回微波爐高火煑1分鐘,

    加入麻油、盬調味即可食用。

     

    Place noodles in pot, add one bowl of cold water, then bring to boil (about 3 minutes). Add vegetables, meat, sesame oil, and salt to your liking OR stir fry the noodles with your favourite ingredients.

     

    Microwave cooking:  Cover noodles with water and soak for 3 minutes in a  microwaveable bowl, then cook for 2 minutes with high power. Separate noodles with chopsticks, then cook with high power for 1 more minute, add sesame oil and salt to your liking before serving.

     


    精選港式大牌檔奶茶 Hong Kong Milk Tea

     

    以1满湯匙茶葉加入加一滿杯(mug) 沸水中焗3分鐘;
    如要更香濃應慢火再煑沸,熄火焗2分鐘;
    用約1/5杯黑白奶,沖入隔去茶葉之濃茶,

    隨意加糖便成香濃美味之港式奶茶。

     

    Add 1 round tablespoon of tea leaves to 1 full mug of boiling water, cover and leave for about 3 minutes. If you like a stronger taste, boil tea over low fire. Fill 1/5 of the mug with milk, pour tea with a seive on the mug to separate the tea leaves, then add sugar.

     


私房配搭咖啡豆  

    精選私房配搭咖啡豆,可選已磨粉或全豆。 配以特級咖啡忌亷。

    咖啡忌廉可直接加入巳沖好咖啡內,

    或以1份忌亷加1份熱水打或泡沬忌亷,

    放在咖啡上即成Cappuccino

     


    紅臘腸、臘肉、臘鴨脾

     先用熱水浸15分鐘,取出吹乾一會,即可隨水放飯面蒸熟。

    也可用水煲15分鐘,取出吹乾15分鐘,即可隨水放飯面蒸熟。

     

    鮮鵝肝腸/ 鮮鴨膶腸

    用熱水沖洗一下,即可隨水放飯面蒸熟。

     


    私房豆豉醬、私房欖豉醬、私房仁棯醬

     

    肉類:用約1湯匙私房醬料醃製肉類、排骨、豬頸肉、雞肉約1/2小時,蒸熟便可,方便美味。

     

    豆腐、鮮魚、白鳝、蝦、元貝、:將豆豉醬、欖豉醬放在上面,蒸熟後加入少許熟油、生抽便可。

     

    亦可用於小炒,甘香美味。

     

    仁糆醬特別適用於蒸魚頭雲,排骨,開胃惹味。


 

蜜餞金華火茸、頂級鲜甜即食蝦子、頂級即食大地魚茸

金華火茸用純正蜂蜜釀製,佐用於粥、麵、飯,甘香滋味。

 

豆腐、鮮魚、蒸水蛋、蒸冬瓜:

可放1 湯匙火腿在上面同蒸,香氣满溢。

 

大地魚茸特別適用以滚瓜菜湯、鮮甜味美。


醒胃沙爹醬

肉類先切成片,用少許糖、盬、醃一下、先將肉類炒熟或煎香,淋上沙爹醬便可。

 

肉類也可用竹簽串好放爐上燒熟或焗熟,食時沾上沙爹醬,配以青瓜更醒胃美味。


即食私房愛心燉煑上湯

 

選用上雞、金華火腿、精肉等慢火燉煑8-10小時,色澤金黄;

配以上海手打掛麫、伴以青菜,乃麫食極品;

亦可用以煨魚翅、花膠、海參……。


 

Unless otherwise stated,  Gerine’s Poultry are supplied fresh from farms in Hong Kong. Do NOT OVERCOOK while reheating these dishes.

 

Reheating Instructions
 

Chicken / Pigeon/ Smoke Duck Dishes

1. Microwave warming
Cut the chicken in pieces, place in Microwave oven, warm for 1 minute in high heat setting, if chicken is not hot enough, add another 30 seconds, heat up the sauce separately and add to chicken when serve.

 

2. Warm with a serving pot.
Cut the chicken, heat up the sauce in a serving pot, remove from fire before adding in the chicken, cover and leave for 5-10 minutes before serve.

 

3. Warm on top of soup pot.
Cut the chicken and place in a large serving plate that is  bigger than the soup pot, remove the cover of the soup pot and place the plate on top of the boiling soup pot DO NOT COVER the chicken for 5-10 minutes until warm. Heat the sauce separately, and add to chicken when serve.

 

Braised whole Duck
Place the whole duck in a pot, add 1-2 oz water to the sauce, bring to boil on medium fire, serve the duck in whole or cut up into pieces.

 Or

Cut the duck into pieces, warm as above instructions.

 


 

Cleaning the Airtight Boxes

Wet a cloth for cleaning, pour some white vinegar onto the cloth;

wipe clean the boxes in and out with vinegar, then wash with dish detergent to clean, rinse and dry before putting back the cover.
